A tropical drink that wandered into a haunted house. Coconut and pineapple meet electric blue curaçao, with a dark berry swirl and an optional silver shimmer.
Ingredients
- 1 1/2 oz coconut rum
- 1 oz blue curaçao
- 1 oz pineapple juice
- 1/2 oz fresh lemon juice
- 1/4 oz blackberry syrup
- Splash of lemon-lime soda
- Edible silver shimmer (optional)
- Ice
Method
- Add the coconut rum, blue curaçao, pineapple juice, lemon juice, and shimmer to a shaker with ice.
- Shake for 10 to 15 seconds and strain into a glass over fresh ice.
- Top with a splash of lemon-lime soda.
- Slowly drizzle the blackberry syrup over the top. Being heavy with sugar, it sinks and makes a dark, ghostly swirl.
Why it works
Coconut rum and blue curaçao are both sweet, so the lemon juice does important work keeping this from tasting like a snow cone. Blue curaçao is simply orange liqueur dyed blue.
Swaps and notes
- Shaking the syrup in with everything else is fine too; the drink will just turn a darker color instead of swirling.
- Coconut rum is about half the strength of regular rum. If you substitute white rum, use 1 oz and add a little coconut cream or syrup.
- Contains: coconut, citrus.
How strong is it?
About 1 standard drink as a full cocktail, since coconut rum is lower in alcohol. Split four ways, about 0.25 each.
