Blackout Ghost

A dark berry-and-rum drink with a white coconut “ghost” floating on top. It looks dramatic and is easier to make than it looks.

Ingredients

  • 2 oz Malibu Black rum
  • 1 oz blackberry vodka or black raspberry liqueur (Chambord)
  • 2 oz coconut cream
  • Crushed ice
  • Fresh blackberries, for garnish

Method

  1. Fill a highball glass halfway with crushed ice.
  2. Add the Malibu Black and the blackberry vodka or Chambord. Stir gently to combine.
  3. Whisk the coconut cream smooth, then slowly pour it over the back of a spoon so it floats on top in a ghostly layer.
  4. Garnish with blackberries.

Why it works

This is a built drink with a float. Coconut cream is lighter than the sugary spirits below it, so a slow pour lets it rest on top. Guests can stir it in, or sip through the layers.

Swaps and notes

  • Malibu Black is stronger than regular coconut rum, about 35% ABV. Can’t find it? Use 1 1/2 oz dark rum plus 1/2 oz coconut rum.
  • Coconut cream is unsweetened. If you want a sweeter ghost, use a little cream of coconut instead (see Mixers and Mixing).
  • Contains: coconut.

How strong is it?

About 1.5 to 1.8 standard drinks as a full cocktail, depending on whether you use Chambord or blackberry vodka. Split four ways, about 0.4 each.
