A dark berry-and-rum drink with a white coconut “ghost” floating on top. It looks dramatic and is easier to make than it looks.
Ingredients
- 2 oz Malibu Black rum
- 1 oz blackberry vodka or black raspberry liqueur (Chambord)
- 2 oz coconut cream
- Crushed ice
- Fresh blackberries, for garnish
Method
- Fill a highball glass halfway with crushed ice.
- Add the Malibu Black and the blackberry vodka or Chambord. Stir gently to combine.
- Whisk the coconut cream smooth, then slowly pour it over the back of a spoon so it floats on top in a ghostly layer.
- Garnish with blackberries.
Why it works
This is a built drink with a float. Coconut cream is lighter than the sugary spirits below it, so a slow pour lets it rest on top. Guests can stir it in, or sip through the layers.
Swaps and notes
- Malibu Black is stronger than regular coconut rum, about 35% ABV. Can’t find it? Use 1 1/2 oz dark rum plus 1/2 oz coconut rum.
- Coconut cream is unsweetened. If you want a sweeter ghost, use a little cream of coconut instead (see Mixers and Mixing).
- Contains: coconut.
How strong is it?
About 1.5 to 1.8 standard drinks as a full cocktail, depending on whether you use Chambord or blackberry vodka. Split four ways, about 0.4 each.
